As preparation, your chef will elaborate on Gotland Island’s micro- cuisine on the way to Ejmunds Farm, which the same family has owned since 1862. There, you will learn how the farmers humanely raise cattle to produce a highly marbled, exceptionally tender Kobe- like beef that is prized throughout Sweden. The farm also grows organic black truffles beneath hazelnut trees, which were planted specifically to help the truffles thrive in the roots. At Lilla Bjers Farm, another multi-generational enterprise, you will see first-hand how the owners practise organic, sustainable farming. As you walk through the fields with the farmers, they will elaborate on the produce and how it is harvested.
